Four Seasons Scottsdale opens new restaurant, Proof

SCOTTSDALE, Ariz. – The Four Seasons Resort Scottsdale at Troon North this month opened a new restaurant called Proof, a casual alternative for guests of the AAA Five Diamond property.

The step-back-in-time menu, overseen by executive sous chef Jesse Hansen, includes a soda fountain that dispenses milkshakes, and items such as po’boys, fried green tomatoes and hand-sliced sandwiches. Adults can choose from a selection of small-batch American spirits, including whiskey and bourbon, and more than 50 microbrews. For children, there are handmade candies and “TV dinner” menus. 

Proof evokes the area’s history with a Wild West-themed decor, including railroad track running through the dining room and photos of railroad workers on the walls. The restaurant, which has patio dining, looks out on Pinnacle Peak.

Proof will be open continuously from 7 a.m. to 11 p.m., and the music and TV programming will change throughout each day. Patrons will experience sitcom theme songs and vintage cartoons in the mornings; classic westerns along with bluegrass, country and light jazz music at lunch; and at night, sports on the TV screens backed by rock, jazz and funk music. 

The new restaurant, part of a $2.5 million renovation, occupies the space that used to house Crescent Moon restaurant. It complements Talavera, the Four Seasons’ fine-dining restaurant.

The Four Seasons Scottsdale is located near Troon North Golf Club and operates stay-and-play packages with that 36-hole facility.
